Coconut date energy bites

This recipe is our (and definitely also our guests) all-year-round favourite: the coconut date energy bites. This delicious vegan snack works perfect at any hour of the day – no matter if you are just craving for something sweet or if you truly need some extra energy. These date bites are not only our best-loved sweet because of its amazing taste, but also because they can never go wrong! As long as you use enough dates so the balls don’t fall apart, you can adjust the recipe to your own liking. 

Ingredients for approximately 14 power balls:

250 gram dates – preferably pitted dates, saves a lot of time

20 gram almond cubes – these small cubes give the unmissable crunchy bite

10 gram chocolate – you can use a piece of pure chocolate or some cacao nibs.

1 teaspoon of coconut oil

1 tablespoon of peanut butter

A plate covered with dried grated coconut

Pinch of sea salt

Suggestion: we often add some extra nuts or oats for example. But you can also try chia seeds or cranberries. Or cover them in pistachios.

To start, put all the ingredients together in a food processor or blender and blend it for about 1 minute so it becomes a sticky paste with a crunchy bite. If you still see some bigger date pieces, blend it for another 1 or 2 minutes. The dates should be completely mixed with the other ingredients so the blend sticks well. After this we put the mixed ingredients in a bowl and we cover a plate with grated coconut. Take small bits of the date mixture and make little round balls in your hand. When the ball is nicely round and solid, you can roll it around in the grated coconut so the bites get evenly coated in white coconut flakes. Keep going until there is nothing left of the mix. When finished, leave the coconut energy bites in the fridge and after 1 hour your delicious – no bake- energy snack is ready!
